Fresh Peach Cobbler
Chris Hunter
This recipe was created from three other recipes by my daughter, Mindy Larson.
Mix together and pour over 6 cups fresh sliced peaches, sweetened with a little sugar, in a 9 x 9 pan:
1 1/2 Tbsp. cornstarch
1/4 to 1/3 cup cold water
1 Tbsp. lemon juice
Sprinkle with 2/3 cup brown sugar and dot with 1 Tbsp. butter. Place in 400 degree oven to heat while fixing the following:
Sift together:
1 cup flour
1 Tbsp. sugar
1 1/2 tsp. baking powder
1/4 tsp. salt
Cut in 1/4 cup butter. Add 1/4 cup milk mixed with one slightly beaten egg. Add to dry ingredients. Mix well and drop by spoonful over fresh peach mixture. Bake 20 minutes at 400 degrees. Serve with vanilla ice cream or whipped cream.
