Oatmeal Chocolate Chip Cookies
Maryn Cardinal - When I was in Young Women's, one of my leaders taught us how to make these classic oatmeal chocolate chip cookies for a YW Activity. I loved them and have made hundreds of batches since including a plateful I auctioned off at the Relief Society Service Auction in February 2017. Baking coconut also makes a tasty addition!
Phyllis Pingree - I send these cookies to missionaries, friends, funerals, ice cream socials, and any other activity that calls for a delightful treat. I always double it so it spreads everywhere!
1 cup butter, softened
1 cup brown sugar
1 cup white sugar
2 eggs
1 tsp. vanilla
1/2 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
2 1/2 cups flour (Phyllis' recipe calls for 2 cups)
2 1/2 cups oatmeal (old fashioned)
1 cup milk chocolate chips (big or small chip size)
1 cup chopped nuts, optional
Cream together sugars and butter. Add eggs and vanilla and combine. Mix flour, oatmeal, baking powder, baking soda, and salt and add to creamed mixture. Stir in chocolate chips and (opt.) nuts.
Maryn - Roll into one inch balls and place on ungreased cookie sheets, press down balls with palm of hand to flatten. Bake at 400 degrees for 6 minutes. Makes approximately 3 to 4 dozen.
Phyllis - Drop by spoonfuls onto baking sheet. Bake for 17 minutes at 300 degrees. Do not overcook.
