Mint Brownies

We love to make these for friends and family- or when I need my chocolate fix! Definitely a crowd pleaser!
1
lb. butter, softened
4 cups sugar
1 cup cocoa
6
eggs
4
tsp. vanilla
3 cups flour
Cream
butter and sugar together. Mix in remaining ingredients in order listed. Bake
in greased jellyroll pan at 350 degrees for 30 minutes.
Frosting:
1
cube butter softened
¼ cup evaporated milk
Food
coloring (optional)
4 cups powdered sugar
1
tsp. peppermint extract
Mix
all together. Frost cooled brownies. Refrigerate brownies before pouring on
melted chocolate topping.
Topping:
1
cube butter
1
Tbsp. vanilla
1
½ cups semi-sweet chocolate chips
Melt
butter & chocolate chips. Add vanilla. Pour over cold brownies, tipping the
pan to cover evenly.
