Pasta Chicken Salad

This is my son-in-law's favorite.

3 cups cooked, diced chicken
6 cups spinach
6-8 oz. cooked rotelle pasta
1/4 cup (or more) diced green onions
1/4 cup sesame seeds
1 red pepper, diced
1/2 (8 oz.) can salted cashews    

Toss above ingredients together and cover with dressing.

Dressing:
1/2 cup salad oil
1/3 cup soy sauce
1/3 cup rice vinegar
3 Tbsp. sugar
2 tsp. ginger
1/2 tsp. pepper
