The Best Lemon Pudding Ever

This lemon pudding is my dad's favorite. My mother always made it for him. She has been gone now for over 30 years and I make it for him whenever I get a chance.

(You might want to double the recipe!)
1 cup sugar
3 eggs
5 Tbsp. lemon juice
1 lemon rind
4 Tbsp. flour
2 Tbsp. butter
1 1/2 cups milk
Pinch of salt

Cream butter.  Add sugar, flour, salt, lemon rind, and lemon juice. Pour in well beaten egg yolks and milk. Stir well. Fold in egg whites beaten to soft peaks. Pour into square glass baking pan. Place pan in larger pan of hot water and bake at 350 degrees for 45 minutes.
