German Sweet Potato Salad **

This is my husband's favorite salad. When we started eating an AIP (Autoimmune Protocol) diet for health reasons I needed to find an alternative for potato salad. I stumbled across this recipe and it has become a family favorite. It is made for all holidays.
6 big sweet potatoes 
1 ½ cups chopped green onions 
½ cup apple cider vinegar 
3 Tbsp. bacon fat
16 oz. bacon
2 Tbsp. maple syrup
Smoked salt to taste

Chop sweet potatoes into 1 inch sized pieces. Bake on parchment lined cookie sheet in oven at 350° until tender. Toss with spoon a few times while cooking. Bake bacon in oven also on a cookie sheet for about 40 minutes on 350° until brown and crispy. (I cook my bacon and sweet potatoes on the same cookie sheet) In sauce pan, add vinegar, maple syrup and bacon fat. Cook on medium heat for 10 minutes. (It will splatter a bit, so watch it carefully.) Chop bacon into tiny pieces. Set aside. 

Trim off bottoms of green onions and chop into thin slices. In a bowl, add cooked sweet potatoes, chopped bacon and green onions. Pull vinegar/bacon fat off of heat and carefully pour over sweet potato mixture. Add a few pinches of smoked salt. Mix gently with spoon to incorporate the sauce into the salad. Serve immediately. Serves 6.
