Chicken and Spinach Pasta Salad

This salad is always a hit!

12 oz. spiral pasta
3 cups shredded cooked chicken
One bunch of green onions- sliced thin
Sliced sweet peppers (I use the small bell peppers you buy in the bag)
1/4 cup roasted sunflower seeds
Baby spinach

Put chicken, pasta, peppers, and green onions in bowl. Pour most of the dressing over the mixture, cover and chill overnight (or most of the day)...When ready to serve, mix with spinach and sunflower seeds and extra dressing.

DRESSING*:  Blend well in blender: 
1/2 cup canola oil
1/3 cup soy sauce
1/3 cup white vinegar
3 Tbsp. sugar
1/4 tsp. pepper

*I usually double the dressing so that I have plenty to pour in when I toss in the spinach
