Chicken Salad Sandwiches **

I have made these chicken salad sandwiches for farewells, homecomings, and weddings. It is wonderful on croissants. If you times this recipe by 6 it fills 200 croissants.

4 chicken breasts, cooked and shredded
1 cup finely chopped celery
1 bunch green onions, chopped, using both white and green parts
1 cup light Miracle Whip
1/2 cup low-fat sour cream
Juice of 1/2 large lemon
1 cup sliced red grapes
Sliced almonds (if desired)

Mix together chicken, celery, and green onions in large bowl. In smaller bowl combine Miracle Whip, sour cream, and lemon juice. Pour into chicken mixture and mix together. Add red grapes and almonds and mix until evenly distributed. Fill croissants or other roll of choice.
