Corned Beef and Cabbage

Corned beef and cabbage is one of Cap's favorite meals. This is a wonderful recipe but Cap prefers to have the meat cooked, in a large pan, covered with water (add spice packet) and as it cooks, continue to add water to keep the meat covered. (follow directions on package) When cooked, add a head of cabbage cut in wedges, cook until tender. The corned beef also makes wonderful sandwiches.
Crock-pot recipe
2 onions, thickly sliced
1 corned beef brisket (about 3 lbs.with seasoning packet
1 (8-10 oz.) pkg. baby carrots
6 medium potatoes, peeled and cut into wedges
1 cup water
3 to 5 slices bacon
1 head green cabbage, cut into wedges
1. Layer onion slices to cover bottom of crock-pot, slow cooker. Add corned beef with seasoning packet, carrots and potato wedges. Pour 1 cup water over. Cover and cook on LOW 10 hours.
2. With 30 minutes left in cooking time, heat large saucepan over medium-high heat. Add bacon, cook and stir until bacon is crisp. Remove bacon with slotted spoon and drain on paper towels. When cool enough to handle, crumble bacon.
3. Place cabbage in saucepan with bacon drippings, cover with water. Bring to a boil and cook 20 to 30 minutes or until cabbage is tender. Drain. Serve corned beef with vegetables. Top with bacon.
