Lucy Park - This recipe from "The Joy of Cooking" cookbook is an old Park family staple. They are simple to make and fun to watch in the oven as they rise high over the pan. I learned to make these while living in student housing (University Village) at the "U" when I didn't know how to make anything else. At that stage I had to call my mom to ask how to boil an egg. Luckily these pancakes are a breeze!

Caroline Hale - Every time I make this recipe it takes me back in time to my childhood - waking up Sunday mornings to my oldest sister making these and the rest of us making orange julius' (sometimes even before mom and dad were awake.) There was never a piece left in the pan. In fact, we always fought over the last piece or two.
1 square butter
1 cup milk
6 eggs
1 cup flour
1/4 tsp. salt, optional
Melt butter in 9 x 13 pan at 400 degrees (do not brown). Mix eggs, flour, milk and salt (if desired) in blender. Pour mixture into pan with melted butter. Bake for 20 minutes; serve with syrup.
