Gluten Free Freezer Meatballs
Jill Rich
Having several family members and friends who eat low-carb and gluten-free, these meatballs are a favorite. They can be dressed up for dinner or eaten on the go as a quick snack.
6 garlic cloves, minced
2 small diced onions about 2 1/2 cups of pre-chopped onions
1 1/2 tsp. oregano
5 eggs, beaten
1 1/2 tsp. pepper
2-3 tsp. salt
2 1/2 cups oatmeal (ground)
1 1/4 cups milk
1 1/4 cups Parmesan cheese, shredded
2 1/2 lbs. ground meat (1/3 pork & 2/3 turkey or all beef)
Mix all ingredients together, roll into golf ball size meatballs. (Makes 30-50 depending on size) Bake about 30 mins at 350 degrees. Cool & freeze. (These are easy to heat up and are great with spaghetti and marinara sauce or any other noodle/rice and sauce.)
