Granola

My kids love this in yogurt parfaits - it's cheaper than store bought and so much better!

8 1/2 cups oatmeal
1 1/2 cups coconut
1/2 cup brown sugar
1/2 cup honey
3/4 cup water
1/2 cup canola oil
1/2 tsp. vanilla
3/4 tsp. salt
2 cups wheat germ
3/4 cups sunflower seeds
1 - 2 cups raisins

Combine dry ingredients. Mix honey, brown sugar, oil and water and heat together until sugar is dissolved. Stir in vanilla and pour over dry ingredients. Mix to combine. Bake at 350 degrees for 15-20 minutes until golden brown, stirring occasionally if necessary.

I use this basic recipe and then add whatever I like - pecans, cashews or walnuts, craisins, dried cherries and blueberries. (Costco has the best dried fruits and nuts for the price). You can add whatever you like. The fruit is best stirred in after the granola is toasted so they don't get tough. Each batch I bake is different and it's always good! This recipe is easily doubled.
