Mousse Cake

This is a really pretty, beautiful cake. It is often made in the Christensen family for parties and several of my children request it for their birthdays. It's very rich so a little slice will do.

1 pkg. oreo cookies
1 cube of butter
6 eggs
2 cups heavy whipping cream
6 Tbsp. powdered sugar
2 2/3 cup semi-sweet chocolate chips (one pkg.)

Crush oreos and mix with melted butter. Press on bottom of spring-form pan. Put in refrigerator. Melt chocolate chips in microwave for 60 seconds, stir, melt another 30 seconds, stir, etc...until they are melted. Set aside. In another bowl beat 2 whole eggs. Set aside. Separate 4 egg whites and 4 egg yolks. Beat egg yolks. Beat egg whites until frothy (makes peaks). Whip heavy cream with powdered sugar. Now beat melted chocolate with 2 beaten eggs. Add 4 egg yolks and mix. Alternate folding in a spoonful of cream with a spoonful of egg whites until mixes. Pour in crust and let sit in fridge overnight. You can spread with more whip cream, berries or cool whip. (I like to garnish with fresh raspberries arranged on the cream.)
