Peanut Butter Chocolate Chip Cookies
Kathy Anderson
This is a recipe that I used on my mission. When missionaries came to stay with us at our apartment this became a real treat for everyone. I couldn't get chocolate chips in Ukraine so I used chocolate bars and chopped them up into little pieces. The Ukrainian peanut butter was a different consistency but it made the cookies very moist. I like to add some fresh peanut butter and press it into the top of the cookie before I bake them.
1 cup unsalted butter
1 cup crunchy peanut butter
1 cup white sugar (I use 3/4 cup)
1 cup packed brown sugar (I use 3/4 cup)
2 eggs
2 1/2 cups all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
1 1/2 tsp. baking soda
Chocolate chips
Cream butter, peanut butter and sugars together in a bowl; beat in eggs. In a separate bowl, sift flour, baking powder, baking soda and salt; stir into butter mixture. Stir in chocolate chips. Put dough in refrigerator for 1 hour. Roll dough into 1 inch balls and put on baking sheets. Flatten each ball with a fork, making a crisscross pattern. Bake in a preheated 375 degree oven for about 10 minutes or until cookies begin to brown.
