Pumpkin Pancakes

My daughter Karin makes these for her children during the fall. Since Arizona has few signs of Autumn, she celebrates the seasons with food. (Actually her boys have learned to make these and cook them all year long). They are a family favorite. This makes 20 pancakes
2 cups flour
1 Tbsp. baking powder
1/2 tsp. salt
2 Tbsp. sugar
1 tsp. pumpkin pie spice
2 eggs
1 3/4 cups milk
2 Tbsp. melted butter
1/2 can pumpkin
Sift together the flour, baking powder, salt, sugar, and pumpkin pie spice in a large bowl.
In a medium bowl, whisk the eggs and milk. Add 2 Tbsp. of melted butter and the pumpkin to the wet ingredients and whisk together. Pour the pumpkin mixture over the dry ingredients and stir just until blended - a few lumps are okay.
Heat griddle over med-high heat. Spray pan with cooking spray, or melt some butter to prevent pancakes from sticking. Pour 1/4 cup batter for each pancake. When the pancakes bubble on the top, flip, and cook until brown on the other side.
