Rachelle's Summer Olympics Granola

From my BYU swimmer son's teammate who was an Olympic diver in the 2004 Olympics - her on deck snack in a bag.
6 cups oats
1 tsp. cinnamon
1 cup coconut
1/2 cup honey
2 Tbsp. vegetable oil
1 cup dried fruit (I use Marianna's tropical mix which you can find at Dan's in Foothill)
3/4 cup milk chocolate chips
1/2 cup sliced almonds
1/2 tsp. salt
1/2 cup brown sugar
1/3 cup water
1 tsp. vanilla or almond
Combine all liquid ingredients in glass bowl or cup and microwave one minute. Combine dry ingredients, except fruit and chocolate in large bowl; mix to blend. Stir in liquid ingredients; mix thoroughly. Bake on greased sheet at 350 degrees for 12-15 minutes, stirring once during baking. When cool, add fruits and chocolate chips.
