Rice/Spaghetti Bite Side Dish

Charlotte Thornton

You can make your own Rice-a-Roni. One of the new items at Welfare Square Storage Center are spaghetti bites. As I wondered how to use it one of the missionaries said he combined rice with the bites to make Rice-a-Roni and got the recipe on line. He said that his mistake was to make up the whole recipe because as it cooked and expanded he ended up with several pots full. I found a recipe on line for Rice-a-Roni and modified it to fit my cupboard ingredients.

Rice/Spaghetti Mix

2 cups uncooked rice
1 cup spaghetti bites - Available at Welfare Square Dry Pack
1/4 cup dried parsley
2 tsp. onion powder
1/2 tsp. garlic powder
1/4 tsp. dried thyme

Combine all ingredients, mix well, and store in an airtight container. This will make 3 recipes.

How to use Rice/Spaghetti Mix

Melt 2 Tbsp. of butter in a 12" skillet.
Add 1 cup of mix.  Saute for about 1 minute or until pasta starts to turn golden brown.
Add 2 bouillon cubes and 2 1/4 cups water.  Bring to a boil.
Reduce heat, cover and simmer for 15 minutes.
