Spinach Mushroom Salad

This is a salad that my mom made when I was growing up. It was my favorite and I now make it for my own family.

Dressing:
1 1/2 Tbsp. poppy seeds
3/4 cup white vinegar
1 1/2 cup oil
3/4 cup sugar
1 1/2 Tbsp. grated onion
1 1/2 Tbsp. salt
3/4 tsp. dry mustard

Salad:
1 purple onion, sliced in rings
3/4 lb. fresh mushrooms, sliced
1 1/2 to 2 pkgs. spinach (or 2-3 bunches)
1 small head Iceberg lettuce
3/4 lb. grated Swiss cheese
1 cup cottage cheese, drained
1/2 lb. bacon, cooked crisp and crumbled

Mix dressing and marinate mushrooms and onion overnight. When ready to serve, combine with spinach, lettuce, Swiss cheese, cottage cheese, and bacon.
