Growing up my brothers and I and our friends loved these crepes my mom, Jasmine Rich, would make for us.  I make them at our family cabin and almost every weekend for breakfast … and sometimes for dinner.  (Jill adapted the recipe for a healthier version - also found in this cookbook.)

Combine: 
1 cup white flour
2 eggs
2 cups milk

Cook in a sprayed pan on med to med/high heat. Some favorite toppings are lemon juice & powdered sugar, Nutella, fresh fruit, butter & syrup, whip cream, whatever sounds good.
