Zucchini Fruit Bread

This zucchini fruit bread is my mom's recipe. She is a wonderful cook! I grew up sitting in the kitchen talking to her as she created yummy things to eat. When I was in high school my friends would come over and stay and visit with my mom even when I was not home. She offered them delicious treats and a listening ear.

Blend:
3 eggs
½ cup oil
1 cup sugar
3 tsp. vanilla
Stir in:
2 cups coarse grated zucchini
1 can crushed pineapple, drained
1 cup raisins
1 cup nuts (if desired)
Add:
3 cups flour
½ tsp. baking powder
2 tsp. baking soda
1 ½ tsp. cinnamon
1 tsp. salt
¾ tsp. nutmeg
Divide evenly between two loaf pans that have been buttered and floured or lined with parchment paper. Bake at 350 degrees for 1 hour or until a toothpick comes out clean.
