Americanized California Roll

I love the process of starting with a bunch of random ingredients and putting them together to create something different and delicious.

4 cups sticky rice, cooked in rice cooker
1/8 cup rice vinegar
Sea Weed
Sliced cucumber
Imitation crab meat
Tuna fish or scrambled egg pieces

Remove rice and add rice vinegar and cut it into the rice to mix it--horizontally and vertically. Take one sheet of sea weed and place on bamboo mat. Spread out layer of rice on one end of sea weed about 1/3 the way up. In center of rice, add sliced cucumber, imitation crab, tuna fish or scrambled egg pieces, or a variety of these.  Wet the end of the seaweed where there is no rice and roll sea weed beginning from the rice end and press firmly. Continue with more sheets of seaweed until all your sliced veggies are used.  Using a sharp knife, cut into 1/2 inch slices.  Serve immediately with soy sauce to dip.
