Black Bean burgers
2 (14.5 oz) cans black beans, rinsed and drained
1 cup seasoned breadcrumbs
¼ cup grated white onion
1 whole egg
½ tsp. chili powder
1 tsp. garlic powder
Salt and fresh ground black pepper, to taste
6 slices Swiss cheese
6 whole Kaiser Rolls or Hamburger buns
Optional toppings: Mayonnaise, Lettuce, Sliced Tomato, and
hot sauce (Choloula) or salsa
In a food processor, pulse onion until finely chopped.
Add 1 can of black beans, egg, chili powder
and garlic power, and pulse to combine. Transfer mixture to a large mixing bowl: add the
remaining can of black beans and the breadcrumbs. Season with salt and pepper, to taste, and mix
until well combined – mashing
beans until mostly broken up, but leaving some whole beans. Form mixture into 6 patties (using large biscuit cutters
to shape of needed) and place on parchment paper covered or greased pan. Bake at 400 degrees for 10 to 15
minutes or until a bit crisp around the edges and then flip and cook another 8-12 minutes.
Should have crisp exterior and moist interior.
Serving suggestion: serve on a bun and top with cheese, lettuce, tomato, avocado, and
mayonnaise and/or ketchup.
