Date Roll Cookies

These were a traditional Christmas cookie that my mother made. She passed away at the age of 51, and so incorporating those traditional recipes into our holidays helped us reflect on great memories.
1 cup butter
2 cups brown sugar
3 eggs
1/2 tsp. salt
1 tsp. baking soda
4 cups flour
Filling:
1 cup water
2 1/2 cups chopped dates
1 cup sugar
1 Tbsp. lemon juice
1 cup chopped walnuts or other nuts
Boil water, dates, sugar and lemon juice together and let cool; then add nuts and mix.
Cream butter and sugar. Beat eggs and add to creamed mixture, then add remaining ingredients Roll out 1/4 of mixture on waxed paper into oblong shape. Spread with 1/4 of filling mixture. Roll it up and the long way and wrap wax paper around it. Make up three more rolls in same manner. Refrigerate for several hours. After refrigerating, slice rolls into about ½ inch slices and put on lightly greased cookie sheet. Bake at 375 degrees for 7-8 minutes.
