Frozen Peach Cocktail
Leslie Smoot
I make lots of this in the fall when the Lemon Elberta peaches are ripe and keep it in the freezer. We have the taste of fresh peaches all year long.
1 cup sugar
12 large peaches (about 3 lbs.), peeled and sliced
2/3 cup orange juice
1/4 cup lemon juice
1/4 cup lime juice
1 (20 oz.) can crushed pineapple, undrained
Sprinkle sugar over peaches and let stand. Combine juices. Add pineapple to juices and pour over the peaches. Freeze in 2 one-quart freezer bags. To serve, thaw slowly in refrigerator for 4 hours or about 2-3 hours at room temperature. Best if served partially frozen, like slush. Makes about 4 pints.
