Grapefruit Mojitos (the non-alcoholic kind...)

This is my favorite drink to serve for dinner parties and cooking classes. They are simple and delicious. I have written the recipe with Pink Grapefruit - but you can substitute any citrus in its place. (The traditional mojito is made with fresh squeezed lime juice- also amazing.)

Handful of fresh Mint
1 cup pink grapefruit juice
24 oz. of San Pellegrino (Doesn't have to be this exact amount- but a bottle around this size will work. Any sparkling water or club soda can work.)
1 cup Simple Syrup (Equal parts of sugar and water brought to a boil to fully dissolve sugar and then cooled)

Remove mint leaves from stems and run the back side of a knife across the leaves. (This breaks up the tannins of the mint leaves- but doesn't actually chop them up- a little more enjoyable when drinking). Place mint in bottom of drinking glasses and add ice. Pour grapefruit juice in each glass. Pour Simple Syrup into glasses. (The sweetness of your citrus will affect how much Simple Syrup you want to add. I usually pour about 1/4 cup of simple syrup in each glass.) Top each drink off with the San Pellegrino. Garnish with slices of pink grapefruit. Serves 4.
