Nanny's Apple Dumplings
Chris Hunter
This is Nanny's (Gary's 96 year old mother's) Apple Dumpling recipe and it is incredible!!! I have been known to use prepared pie crust when in a hurry, but no matter what they must be served hot with cream!
Pie crust:
3 cups flour
1 1/2 tsp. salt
1 cup shortening
1/2 cup cream
Sift flour and salt. Cut in shortening; gradually add 1/2 cup cream and mix and press together. Roll out and cut in squares.
Apples: Choose 9 McIntosh, Granny Smith, or other baking apples. Peel and pare 9 apples and cut into medium sized chunks.
Mix with:
3/4 cup sugar
1 1/2 tsp. cinnamon
Put apples in each pastry square. Dot with extra butter. Fold corners together. Put in greased Pyrex baking pan. Bake at 375 degrees for 15 minutes. Pour syrup over all and bake another 20 minutes.
Syrup:
2 1/4 cups sugar
3 cups water
3/4 tsp. cinnamon
6 Tbsp. butter
Handful of red hot cinnamon candies
Boil sugar, water, cinnamon and red hots 5 minutes. Add butter. Let simmer until time to pour over baking apples. Serve with heavy cream. Sooooo good!
