Banana Bread
Elder and Sister Paul and Mary Clayton
Russia Novosibirsk Mission
Years ago when we were serving in Albania this bread was made for each month for the missionaries, whom I visited with while they were waiting to be interviewed by the President - it's supposedly a healthy snack?? Now as we serve in Russia it is made on occasion for the volunteer district meetings and often delivered to branch widows.
6 ripe bananas
4 eggs
2 ½ cups sugar
1 cup oil
1 cup sour cream
4 cups flour
2 ½ tsp. baking soda
1 ½ tsp. salt
2 tsp. vanilla
Grease and flour 4 medium loaf tins. Blend the bananas first, then add eggs, sugar, oil, and sour cream to blend until smooth. Add flour, baking soda, salt, and vanilla. Bake at 325 degrees for 50 minutes or until inserted toothpick comes out clean.
