Best Bran Muffins

This recipe is from a ward cookbook that was done in our Naperville, Illinois ward while we were living there. Ward cookbooks really are the best! These muffins are a great way to add a little fiber to your diet - even kids love them!

3 cups bran flakes (cereal)
1 cup boiling water
1/2 cup oil
2 eggs
2 1/2 cups flour
1 1/2 cups sugar
2 1/2 tsp. baking soda
2 cups milk

Boil water, then turn off heat and add bran flakes until water if absorbed. (You may leave in pan or put in sealable bowl.) Add remaining ingredients and mix well, getting rid of lumps. Let sit overnight or for several  hours in refrigerator.  Bake in muffin tins at 350 degrees for 20 to 30 minutes.
