Chicken Parmesan

This is one of our family staples that I have borrowed from my sister, Jill Armstrong. She is a master at fast and healthy dinner meals!

10 chicken tenders
1/2 cup Italian bread crumbs
1/2 cup fresh parmesan cheese
1-2 egg whites
Olive oil
1 jar spaghetti sauce
Mozzarella cheese slices

Combine bread crumbs and fresh parmesan. Dip chicken tenders first in egg whites then in bread crumb mixture. Heat 2-3 Tbsp. olive oil in large frying pan on stove top. Brown chicken on both sides until golden. Coat pan with non-stick spray and pour spaghetti sauce in bottom. Place browned chicken on top. Cover with foil. Freeze at this point, if desired or bake at 350 degrees for 45 minutes. Remove foil and place a slice of cheese on top of chicken during the last 15 minutes of baking. Serve with your favorite pasta.
