Cal's Chocolate Covered Marshmallows

Cal's candy was mentioned in each talk given by family members at his funeral. "This recipe takes some effort but it is worth it. It melts in your mouth," says Ruth, Cal's wife. Her only contribution to the candy making seems to have been the clean up. Excellent team effort!
Marshmallow mixture:
6 Tbsp. cold water
2 pkgs. gelatin
Mix together and set aside
Bring to a boil:
1/2 cup water
1 1/2 cup sugar
Remove sugar water from heat and add gelatin mixture. Stir until dissolved. Cool til barely warm.
Beat with mixer until consistency of heavy whipped cream (about 15 minutes)
Add:
Pinch of salt
1 tsp. vanilla and mix in
Pour into 8 x 8 inch greased pan and cool. Cut in squares with sharp knife or scissors (about 6 across and 6 down)
Dip each square in:
1 lb. dipping milk-chocolate that has been melted in oven, microwave or double boiler
Then roll in 1 lb. toasted coconut.
Store in a covered container.
