Creamy Fudge

This recipe comes from my mom, Ona Beus Venable Hadley.  It is a family favorite that has been handed down to grandchildren as well.  We love to make this fudge around Christmas time.

2 cups cream
4 cups sugar
1/2 tsp. salt
1/4 cup plus 1 tsp. Karo syrup
3 1/2 Tbsp. cocoa

Mix sugar, salt and cocoa. Add cream and Karo syrup. Mix well. Cook at medium heat, stirring constantly, until boiling. Cover with a lid for 3 minutes. Cook slowly to 230 degrees (softball stage). Pour out onto cold, wet slab or platter. When fudge is warm to the touch, beat flat on the bottom of the platter.
