Crock Pot French Dip

My daughter Karin serves this to satisfy her six hungry boys yet still have time on Sunday to practice musical numbers with them, or have a bit of time to slip away to read and study herself. Karin and Ricky have a tradition their boys love - only on Sunday do they have "special drinks" meaning soda. They buy a variety of fruit sodas (like lemon, orange, cherry, etc.) and Sprite, chill them, and place them on the table. Special goblets (heavy not delicate ones!) are used. The boys usually mix two or more drinks to concoct their special drink.

1 (3 pound or more) rump or eye of the round beef roast
1 (10 3/4 oz.) can beef consomme
2 cups water
1 Good Seasons Italian dressing packet
1 pkg. au jus gravy packet

Sliced Swiss cheese
Hoagie buns

Place roast in a crock pot. Whisk ingredients together and pour over roast. Cook on High in the crock pot for 6-8 hours, or until you can shred it easily with a fork. Shred the meat and use tongs to place it on hoagie rolls then top with Swiss cheese. Broil sandwiches open-face until cheese is melted and rolls are browned. Serve with strained au jus mixture to dip sandwiches as you eat. Add a green salad and some cut up fresh fruit and dinner is done.
