Easy Spinach Manicotti
Nicole Farrell
I especially love this in the fall and winter as it is yummy comfort food.
1 pkg. manicotti pasta
1 jar pasta sauce
1 container ricotta cheese
1 egg
1 pkg. frozen spinach, thawed
2 cups shredded mozzarella cheese
1/4 cup fresh parmesan cheese
1/2 tsp. nutmeg
Cook manicotti until almost done (the pasta should still be a little hard). Drain and cool. In a bowl, mix ricotta cheese, spinach, egg, half the mozzarella, parmesan and nutmeg. Pour a little bit of sauce in the bottom of a 9 x 13 pan. Stuff manicotti with cheese mixture and place on top of sauce. Pour enough sauce on top of manicotti to cover and sprinkle remaining mozzarella on top. Cover with foil and freeze at this point or bake at 350 degrees for 30 minutes or until cheese is melted.
