Glazed Meatloaf
Michelle Nielsen
Our favorite meatloaf. I often double it and shape it into something festive - a heart, wreath (complete with bow), numbers for a birthday... and for the record, I was doing this before Pinterest!
Sauce: ( I always double or triple the sauce so there's plenty of extra)
1/2 cup ketchup
1/3 cup firmly packed light brown sugar
1 Tbsp. lemon juice
1 tsp. dry mustard
Stir sauce ingredients together; set aside.
Meatloaf:
1 1/2 lbs. lean ground beef
1 1/2 cups bread crumbs
1 Tbsp. dried minced onion
1/4 cup lemon juice from concentrate
1 egg, slightly beaten
1 tsp. beef flavor instant bouillon granules
1/3 cup sauce mixture from above
Combine in mixer or with hands.
On cookie sheet or shallow baking dish, shape into a loaf (or any shape you want). Bake 1 hour at 350 degrees; pour off fat or sop up with paper towels. Pour some sauce over loaf and bake 10 minutes longer. Serve with mashed potatoes and extra sauce.
