Favorite Green Salad **

I brought this salad to the Indian Hills Ward Summer Picnic in August 2017. I got the recipe from an old Indian Hills School cookbook and when I first read the ingredients I thought “you’ve got to be kidding me...strawberries, bacon, pecans AND wontons!!!....what in the world??? I must try this insanity"...the rest is history! My favorite salad!
Dressing:
2 Tbsp. red wine vinegar
3 Tbsp. sugar
1/2 cup oil
1/2 tsp. dry mustard
1/2 tsp. salt
1/2 cup strawberry jam
Salad:
1/3 cup sugar
1 cup cashews
1 large head red leaf lettuce, broken into bite size pieces
1 pkg. fresh spinach, stems trimmed
1/3 cup bacon pieces, cooked
1 cup red bell pepper, chopped
1 purple onion, sliced
1 cup strawberries, sliced in half
15 wontons, cut into thin strips
1/3 cup gorgonzola cheese
Mix dressing ingredients together until well blended.
Heat about a half inch oil in frying pan. Fry wonton strips about 30 seconds until golden. Place on paper towel. Heat a medium frying pan and add sugar and nuts. Stir constantly over medium heat and set aside on wax paper. Combine all ingredients in a large bowl and toss; add nuts last.
