Omega Muffins

These are my favorite fabulous healthy muffins!  My friend's recipe!

2 cups dates, chopped

2 cups boiling water
2 tsp. baking soda
1 heaping cup old-fashioned oats (I use extra oats and no flour)
1/4 cup buttermilk or plain yogurt (I use buttermilk)

2 Tbsp. oil (I use canola)

1/2 cup brown sugar (optional)
2 eggs
1-1/2 tsp. salt
2 tsp. vanilla

1 cup flax seed meal

1 cup oat bran
1 cup almond meal (I grind up raw whole almonds)
2 Tbsp. soy flour (I don't use flour, but you can use any kind--whole wheat, etc.)

2 cups chopped walnuts

1/2 cup (or more) chocolate chips

Put dates in medium bowl; pour boiling water on top of dates. 
Add baking soda and stir slightly--mixture will foam up. Add oatmeal and buttermilk. Set aside to cool.

Cream oil, sugar, and eggs; add salt and vanilla. 
Add flax seed meal, 1/2 of the date mixture, oat bran, the rest of the date mixture, and almond meal. Stir in flour. Stir in walnuts and chocolate chips. Put 1/4 cup of batter in each muffin cup. (My sister fills up the muffin cup--she likes them a little bigger.) Bake at 350 degrees for 12-18 minutes.  (Should be slightly brown; do not over bake, should be moist inside.) Store in freezer and enjoy!
