Plum Cake
Avis Eckardt
This plum cake is an old German recipe that has been in the Eckardt family for years - it's a favorite! Bake it in a loaf pan and use purple plums with green insides.
2 cups flour
2 tsp. baking powder
3 Tbsp. sugar
2 eggs
1 square melted butter plus additional butter to dot on top
Plums
1 cup of sugar for top
Mix flour, baking powder, sugar, eggs and melted butter to make dough; flatten it and put into loaf pan by pieces and smooth out and crimp partially up sides to hold juice. Place quartered plums upright on top of the dough, close together. Dot plums with additional butter. Sprinkle 1 cup of sugar on top. Bake at 350 degrees for 1-1 1/2 hours. Remove from the oven, sprinkle powdered sugar on top.
