Poppy Seed Chicken Casserole **

This is a family favorite of little kids, big kids and adults!!!
4 chicken breasts (cooked and cut into chunks)
2 cups sour cream
2 cans Cream of Chicken soup
2 cups grated cheddar cheese
1 onion, diced and sauteed in butter
Broccoli florets - cut into bite-sized pieces, cooked crisp-tender (almost 1/2 bag from Costco), drain well
Optional - 8 oz. sliced, fresh mushrooms sauteed in butter
Topping:
1 "sleeve" crushed Ritz cracker crumbs
1/2 square butter, melted and mixed with cracker crumbs
Poppy seeds
Layer broccoli, then chicken, in bottom of 9 x 13 inch (sprayed) pan. Mix sour cream, soup, cheese, onion, mushrooms and spread over the top of chicken. Top with buttered cracker crumbs and complete with sprinkled poppy seeds on top. Bake at 350 degrees 40-50 minutes (or until hot and bubbly). Serve alone or over angel hair pasta or rice, if "stretching" it for a group.
