Potato Soup
Jessica Hicks
As a recent newlywed, I set out to make mashed potatoes, but unfortunately they came out with a glue type texture. I was thinking of some way I could save the potatoes and I ended up making this soup! It came out great and my husband loves it.
3 lbs. potatoes, peeled and cut
1/2 cup butter
1/4 cup milk
2 (8 oz.) cans chicken broth
1/2 tsp. salt
1/2 tsp. pepper
Boil the potatoes. Once boiled drain the water. Add butter and milk and blend. Once blended put them back in the pan and add both cans of chicken broth. Let it boil for 15 minutes. Add salt and pepper.
