Sloppy Joes with a Hint of Curry

This recipe is originally from my friend, Winn Jardine and if you need a quick dinner is a real winner. I have made it countless times and it is a family favorite. The curry takes it up a level from normal Sloppy Joes, yet is subtle enough children like it. Makes enough filling for 8-10 hamburger buns.

Mix the following in a saucepan and simmer 10 minutes:
1 (8 oz.) can tomato sauce
1/4 cup catsup
1 Tbsp. vinegar
1 Tbsp. brown sugar
1 1/2 tsp. Worcestershire sauce
1/2 tsp. chili powder
1/4 tsp. curry powder
1/8 tsp. black pepper

Meanwhile, brown the following in a skillet:
1 lb. extra-lean ground beef
1/4 cup chopped green pepper (optional)
1/4 cup finely chopped celery
1/2 cup chopped onion, or 1 tsp. dried onion

Mix sauce into meat then serve on hoagie or hamburger buns that have been buttered and toasted on a cookie sheet under the broiler in the oven. Flavor improves the second day, making it a good dish to prepare ahead for a large group.
