The BEST Cafe Rio Pork

Trust me, this really is the BEST Cafe Rio Pork..... Serve this with "The BEST Cafe Rio Cilantro Lime Rice" and "The BEST Cafe Rio Cilantro Ranch Dressing" - both included in this cookbook. May also serve with tortillas, beans, cheese, lettuce, crunchy tortilla strips, sour cream, and gaucamole.
1 (3 lb.) pork shoulder/butt
1 (8 oz.) enchilada sauce packet (I buy the Frontera brand that is "red chili enchilada sauce with roasted tomato and garlic")
1 cup Root-beer (A&W)
2 cups brown sugar
Place the pork in a crockpot. Mix the sauce packet, root-beer, and brown sugar in a bowl and pour over the pork. Cook on low for 6 hours, remove the meat and shred it. It should be very tender. Place the meat back in the sauce and cook for an additional two hours.
