Acai Bowls

Smoothie bowls are a favorite for the kids- sometimes it's the only way I get anything in them other than Top Ramen and Fruit Roll-Ups. They are a healthy and fun thing to eat for breakfast (although we've definitely had them for lunch and dinner too). You can substitute the Acai juice and fruit for any variety - I also like to add peanut butter, Greek yogurt, or chia seeds to boost the protein, and spinach or carrots when my kids haven't eaten vegetables for awhile. This recipe is the one we used at the "Walk in Her Shoes" Relief Society activity (Sept. 2017) when we each shared a personal story to get to know each other better.

Serves 8 (Makes 32 oz.)

2 cups frozen berries from Costco
1 frozen banana
1 cup Acai juice (Sometimes found at Costco; also found at whole foods and on amazon)
1 cup Almond Milk
Handful of ice

Toppings:
Shredded Coconut
Honey
Granola (recipe also included in this cookbook)
Sliced fruit (strawberries, peaches, bananas, berries, etc)

Blend ingredients together in blender. Pour in bowls and add toppings.
