Grandma Cay's Cheese Wedge
Jill Rich
My grandma, Catherine Burton, would make this cheese wedge and serve it as an appetizer before every family dinner. All the cousins loved it! It’s great to make ahead and freeze to grab when you need a last minute appetizer.
Cream together and divide into three parts:
2 1/2 lbs. cream cheese
4 ounces butter
Bottom layer:
1/4 lb. chopped ham
4 green onions, chopped fine
1/3 of the cream cheese mix
Middle layer:
1 lb. medium sharp cheddar cheese, grated
1/3 of the cream cheese mix
Top layer:
1 bunch of green onions, chopped fine
1/3 of the cream cheese mix
This is layered into three parts (bottom, middle and top) in a round cheese cake pan. In the pan, cut in wedges and freeze. Once frozen, I separate the wedges and individually wrap them in foil. This makes a wonderful last minute appetizer. Pull out of the freezer about 30-60 mins prior to serving. Serve with your favorite crackers.
