Orange and Ginger Grilled Salmon

The first time I made this was about 10 years ago when all 9 of my kids were living at home. I hadn't made salmon before then and all of my kids decided at that moment that they loved it. Peter declared, "I love salmon!" and then said, "Do you know what that really means, mom? It means I love my mom!" Years later when he was serving a mission in Iceland he had dinner at the home of his Branch President. They fed him salmon. That night the Branch President's wife messaged me on facebook and said "Peter wanted me to tell you he loves salmon." It was a special message to me that he loved me!

Marinade:

1 cup orange juice
1 Tbsp. honey
1/4 cup soy sauce
2 Tbsp. ginger, grated
1 clove garlic, minced
2 Tbsp. cilantro, minced
2 Tbsp. canola oil
Salt and pepper
4 salmon fillets, about 1 1/2 lbs.

Mix marinade ingredients in plastic bag. Add the salmon and chill for 30 minutes. Heat a lightly oiled grill over high heat. Sear salmon for about 3 minutes on each side. (I have also used this marinade on chicken - marinade for at least an hour. It's great!)
