Peach Capri Salad

I was working as a personal chef one evening for my brother-in-law and his 9 siblings and spouses. We were doing a fine dining experience in the backyard with 7 courses - and Caprese Salad was one of the salads to serve. My brother-in-law doesn't like tomatoes, so we experimented with a summer peach from the backyard and it turned out fantastic with the fresh mozzarella and balsamic reduction.
6 oz. ball fresh Mozzarella cheese, sliced 1/2 inch thick
2 ripe peaches sliced 1/2 inch thick
12 leaves fresh basil
extra virgin olive oil
Good balsamic vinegar or a balsamic reduction
Salt and pepper
Layer mozzarella cheese slices with peaches, and basil. Drizzle with olive oil and balsamic vinegar; sprinkle with salt and pepper, then serve.
