Peppermint Ice Cream
Leslie Smoot
I took the recipe from the booklet that came with the ice cream maker and changed it for a lighter taste. When our old ice cream maker died, my kids bought me a new one so I could make this kind of ice cream. Definitely a family favorite. (For 6 qt. ice cream maker)
4 cups milk
3 cups sugar
1 1/4 tsp. salt
8 cups half & half
2 tsp. vanilla
4 cups whipping cream
3 cups peppermint candy
Scald milk until bubbles form around edge. Remove from heat. Add sugar and salt; stir until dissolved. Stir in half & half, vanilla, and whipping cream. Cover and refrigerate 30 minutes. Place peppermint candies in a plastic bag. Break into large pieces (about 1/4 inch) by pounding with a mallet or rolling pin. Stir into chilled mixture. Freeze according to ice cream maker's directions.
