Apple Cake

This is family recipe my mother made often. Every autumn Mike would bring home apples from a friend who has an orchard. Then it was Applesauce making and Apple Cake baking time, especially yummy with fresh Jonathan apples. A tasty tradition!

2 cups of sugar
2 eggs
2 tsp. vanilla
4 cups peeled, chopped apples
3 cups flour
2 tsp. baking soda
1 tsp. cinnamon
1 tsp. salt
1/2 cup oil

Combine sugar, eggs, vanilla and apples. In separate bowl, mix together flour, baking soda, cinnamon, and salt. Add to apple mixture. Then add oil. Mix well. Put in greased and floured 9 x 13 pan. Add topping:

Topping:
1 cup brown sugar
1/2 cup flour
1/2 cup butter (cold)
1 cup chopped nuts (optional)

Cut butter into brown sugar and flour to make a crumbly topping; toss in nuts. Put on top of batter. Bake at 350 degrees for 45 minutes to an hour.
