Bob Zito's Famous Spaghetti Sauce
Allene Pike
This recipe is from a friend I taught school with for many years. She traditionally makes it for her husband's Italian family for Christmas Eve dinner. It serves a lot. We used it a couple of times for our neighborhood street party. It makes the house smell delicious and the Mild Granato's sausage makes the taste.
2 (15 oz.) cans of Marinara Sauce/ground tomatoes
2 (15 oz.) cans of tomato sauce
1 (6 oz.) can of tomato paste
1 lb. Italian sausage (Frank Granato's if possible) or ground beef
2 Tbsp. honey or sugar
1/2 cup red wine vinegar
2 cups water
1 tsp. each of garlic salt, onion salt, celery salt
1 Tbsp. fresh ground garlic
1 Tbsp. minced yellow onion
2 Tbsp. Italian seasoning (increase this to 3 Tbsp. if using ground beef)
Take all but one or two links of sausage out of casings and brown. Slice the remaining two links in 2" chunks and brown. Place all ingredients in a large pan and let simmer for 2 to 3 hours. Serve over pasta of choice.
