Butternut Squash Soup

Shauna, my niece, is the best cook in the family. Here is her favorite Butternut Squash Soup.

1 onion, chopped
2 apples, peeled and chopped (golden and fuji work well)
1 pear, peeled and chopped
3 Tbsp. butter
3 - 4 cups chicken broth
1 butternut squash
1/2 tsp. curry
1/2 tsp. cinnamon
1/2 tsp. thyme
1/2 cup heavy cream

Saute onion, apples and pear in 3 Tbsp. butter.

Cook and cube squash. Puree sauteed onion, apples and pear, squash and broth. Pour in pan and add spices and heat. Add cream just before serving making sure the soup is hot.

Choose from these garnishes:  fresh thyme, cinnamon stick, sugared pecans, sour cream, wedge of apple with pecans.
