Elaine's Caramel Popcorn

This is my mother-in-law, Elaine Bergeson's, recipe. She loved when her family gathered at her home and her caramel popcorn was our little reward for sharing our time with her. Everyone loved when she would make it. When she passed away her daughters put a little bag of her homemade caramel popcorn in her casket with her.

1 cube butter
1 tsp. vanilla
1 Tbsp. water
2 cups brown sugar
1/2 cup white corn syrup
1/2 tsp. baking soda
1 cup un-popped popcorn

Pop popcorn and set aside in a brown paper bag. Combine butter, water, and brown sugar in pot. Bring to rolling boil and add vanilla, continue to boil about 2 minutes stirring enough to keep sugar crystals from forming on the sides. Take off heat, add soda and stir in quickly. Pour caramel mix over popcorn and stir and shake in bag to coat well. Form popcorn balls but be careful not to burn your hands! Makes 13-14 popcorn balls.
